Private Event: Cheese 201 at Bellsong Creamery

This Cheese 201 training is for professionals working in the food industry, including but not limited to restaurants, distributors, grocery stores; cheesemongers, cooks, bakers, sales representatives, caterers, taproom or tasting room staff, etc. This training will include detailed information to help empower you and your team to work with cheeses beyond bulk Cheddar, Swiss, and Mozzarella. The course of business will cover best practices for cutting cheese for service and portioning for cooking, rind care and cheese storage, troubleshooting cheese quality and longevity, food safety considerations for cheese, and selecting cheese for your menu or event. This training will be led by Dr. Courtney Johnson, co-owner of Street Cheese, a Certified Cheese Professional and Certified Cheese Sensory Evaluator who also teaches fermentation theory at the Seattle Culinary Academy and is one of the top-ranked cheesemongers nationally and internationally.
